My game is very laggy unless I turn on Smart Animations with optifine using the VanillaBDCraft 512x512

I have 16 of 32 GB of ram Allocated
A 1080 Ti with 11 GB of VRAM
i7 7700k
and Minecraft on and SSD

Why is it lagging so bad without Smart animations on, like at about 10-15 fps max, and then plenty of fps drops when I do end up looking at animations?

Nvidia cards have a tendency to be laggy at 512x. There's no definitive fix, but you can try the steps in this post by enderkitsune.

That served as a small fix for a little boost, I also have a question about PureBDCraft for java, same specs and same optifine and everything, but whenever I load it, no matter if its 512x or 32x, my game shows high fps but it looks choppy whenever I'm looking around, is there a fix for this?

There's this comment on Reddit (bit old, but Java doesn't really change much) with some ideas to try and reduce choppiness:
