The repeating pattern could be easily broke with randomized textures in the same style... but that’s not something we’ll do

And that was super cool years!

Change the resolution then quit Minecraft and relaunch it.
It seems that the resolution does not change before a restart.

We’ll report that issue to Microsoft/Mojang.

It’s Item Hopper and it looks like the grey has changed because it was readable in previous versions.

Sadly we can’t change font colors but we’ll ask that for Optifine

The GUI color do not change by default (it’s not something handled by Minecraft).
However we implemented that feature thanks to Optifine (who kindly implemented it after our suggestion).
